Chai - a winning recipe

The best Chai in the world

 

Garum Chai (hot tea) is a staple of Indian life.  Making the perfect cup is a matter of technique and of course taste.   

Below is my favourite recipe that has developed over the past twenty years.  If you are used to cow milk and sugar with Chai Masala, my recipe will taste lighter and cleaner. 

  

Ingredients

Water  - 50%

Soy Milk  - 50% (Use normal or low fat)

Loose Leaf Tea  - approx 2 teaspoons for every 3 cups

Honey – about 1 rounded teaspoon for every 2 cups

Fresh Ginger – grated (can you ever use too much?)

Cardamom seeds – freshly ground about ½ teaspoon per batch.

 (To use powdered ginger, ground cardamom or tea bags would be acceptable in dire circumstances.)

 Place water in saucepan on full heat

Add tea

Grate ginger, grind cardamom and add to saucepan

Bring to boil

Add Soy Milk, bring back to boil (watch closely, if it boils over it is a really sticky mess)

Remove from heat, add honey

 

 

Strain into cups

Enjoy!
